Rocco DiSpirito’s Egg-White Omelet with Pico de Gallo
Olive oil spray
1 cup egg whites
2 oz. 75% reduced-fat cheddar cheese, shredded
½ cup fresh, store-bought pico de gallo or tomato salsa
½ cup fresh cilantro sprigs
1. Spray a microwave-safe, 6-in. plate with olive oil spray for 1 second. Pour ¼ cup egg whites onto plate, and season lightly with salt and pepper. Microwave eggs on high for 1 minute. Sprinkle egg whites with cheese, and continue to cook on high until eggs are cooked and cheese is melted, about 1 minute. Repeat with remaining egg whites.
2. Remove the last plate from the microwave and spoon pico de gallo evenly over each serving. Garnish with cilantro sprigs and serve.
